Ghee Rice

Ghee  rice is one of my favorite variety rice. It is very easy to make and tasty as well. It can be served with onion raita, boiled egg or any type of spicy Nagpur chicken curry. Now let us see how to make ghee rice step by step.

Ingredients :
Basmati Rice – 2 cup ( soaked in water for 20 minutes )
Onion – 2 (finely chopped)
Tomato – 1 Small (finely chopped)
Corriander – 1/2 cup (finely chopped)
Mint-  1/2 cup (finely chopped)
Green Chilli -4 ( slight length wise )
Ginger Garlic Paste- 2 tsp
Oil – 2 tbsp
Ghee- 2 tbsp
Coconut milk – 1 cup
Water – 2 1/4 cup
Vinegar – 1/2 tsp
Salt to taste

Spices :

Bay leaf -2
Clove -2
Cardamon -2
Cumin seeds- 1tsp

Soak the basmati rice  in water  for 20 minutes before cooking it

Method :

1. Add oil and ghee to the pressure cooker.

2. Once the oil is hot add all the spices (bay leaf, cardamon, clove, cumin seeds )and cook it for a minute. After adding  the spices, the gas should be in the simmered state through out the cooking process.

3. Add the chopped onion, cook it until it becomes translucent. ( it may take up to 2-3 min)

 4.  Add slit chilli and cook for 2 minute. Then add 2 tsp of ginger garlic paste and cook until the raw smell leaves

5. Add chopped corriander and mint and cook it until it changes color and becomes soft. Add finely chopped tomatoes and cook until  the tomato becomes mushy and oil separates. Now add 1/2 tsp vinegar.

6.  Add coconut milk, water, salt and rice. Let the mix come to the rolling boil and when the rice raise to the top close the cooker and cook it in simmer for 10 minutes.

7. Open the cooker once the pressure is released. Fluff it up with a fork and serve it with Raita or curry.

 Notes :

  • I have used ready made coconut milk, you can also use home made coconut milk, both taste good.
  • You can soak a pinch of saffron in 2 tsp milk and add it before closing the cooker, It will give nice  color and flavor to the rice.
  • You can add pinch of salt while sauteing onion to speed up the cooking  process.
