Coconut rice also known as thenga sadam is an easy to make variety rice when you are in a hurry. It is usually served along with papad or potato fry. Let us see hoe to make coconut rice step by step.

Ingredients :

Rice – 1 cup
Oil – 2 tbsp
Mustard – 1/2 tsp
Urad dhal – 1/2 tsp
Bengal gram – 2 tsp
Green / Dry red chilli – 3
Curry leaves – few
Asafoedita – pinch
Gratted coconut – 1/2 cup
Cashew – 8 to 10
Salt – to taste

Method :

1. Cook rice in such a way that the grains are separate, spread it a plate and allow it to cool.

2. Heat oil in a pan, add mustard seeds allow it to crackle. Then add curry leaves.

3. Add  Bengal gram and urad dhal and once they turn slightly brown in color add asafoedita and split dry red chilli.

4.  Add cashews and saute until it turns slightly brown in color. Add shredded coconut and saute it for a minute, add  rice, salt and give it a good mix.

5. Serve it with potato fry and papad.

Notes :

    • Add red chilli or green chilli according to your taste.
    • Cashew can be replaced with peanut.
    • Adding shredded ginger gives a good taste to the coconut rice.
    • If you like coconut oil flavor try making it with coconut oil.
